Ingredients

Peach Filling

  • 2 cups chopped peaches
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 tablespoon cornstarch

Cream Cheese Filling

  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Egg Rolls & Coating

  • 12 egg roll wrappers
  • Oil for frying (about 2 cups vegetable or canola oil)
  • 1/2 cup cinnamon sugar

Glaze

  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Prepare peach filling: In a saucepan, combine chopped peaches, granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch. Cook over medium heat, stirring frequently until the mixture thickens. Remove from heat and let cool completely.
  2. Make cream cheese filling: In a bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Assemble egg rolls: Lay out egg roll wrappers on a clean surface. Place a spoonful of cream cheese mixture in the center of each wrapper, then add a spoonful of the cooled peach filling on top. Fold and roll the wrappers tightly, sealing the edges with a little water to prevent leakage during frying.
  4. Heat oil for frying: Heat oil in a deep skillet or pot to 350°F (175°C). Carefully fry the egg rolls in batches for about 2 to 3 minutes on each side, or until they turn golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
  5. Coat with cinnamon sugar: While the egg rolls are still warm, roll them in cinnamon sugar to coat evenly.
