These Jalapeño Popper Quesadillas combine creamy, spicy, and smoky flavors into a crispy, cheesy tortilla sandwich perfect for a quick snack or appetizer. The blend of cream cheese, cheddar, mozzarella, fresh jalapeños, and crispy bacon creates a deliciously melty filling, enhanced by fresh cilantro and cooked to golden perfection in a skillet.

Ingredients

Filling

  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 jalapeños, seeded and finely diced
  • 4 slices cooked bacon, crumbled
  • 2 tablespoons fresh cilantro, chopped

Base

  • 2 large flour tortillas

Cooking Fat

  • Butter or oil, as needed for cooking

Instructions

  1. Prepare the Filling: In a medium bowl, mix together the softened cream cheese, shredded cheddar and mozzarella cheeses, finely diced jalapeños (seeded to reduce heat if preferred), crumbled cooked bacon, and chopped fresh cilantro until the ingredients are thoroughly combined.
  2. Assemble the Quesadilla: Spread the cheese and jalapeño mixture evenly over one of the flour tortillas, leaving a 1/4-inch border around the edge to prevent filling from spilling out. Place the second tortilla on top, pressing gently to create a sandwich.
  3. Cook the Quesadilla: Preheat a skillet over medium heat and add a small amount of butter or oil to coat the surface. Transfer the assembled quesadilla to the skillet and press down gently. Cook for 3 to 4 minutes on each side, until the tortilla is golden brown and crispy and the cheeses inside have fully melted.
  4. Rest and Slice: Remove the cooked quesadilla from the skillet and place it on a cutting board. Let it rest for 1 minute to allow the filling to set slightly, making it easier to cut.
  5. Serve: Cut the quesadilla into wedges and serve hot. Optionally, accompany with sour cream, salsa, or guacamole for dipping to complement the spicy and creamy flavors.

Notes

  • Remove seeds from jalapeños to reduce spiciness if desired.
  • Use cooked bacon for convenience and enhanced flavor, but crispy texture is essential.
  • Butter yields a richer flavor; oil can be used as a lighter alternative.
  • Resting the quesadilla after cooking helps prevent the filling from oozing out when sliced.
  • Can be customized with additional ingredients like green onions or different cheeses.
