  • 1 tablespoon olive oil

  2. Sauté onions and garlic: Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent, about 5 minutes.
  3. Add carrots and spices: Stir in the sliced carrots, ground cumin, and smoked paprika. Cook while stirring for about 5 minutes to allow the flavors to develop.

  5. Simmer the stew: Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 30 minutes, or until the lentils and carrots are tender.
  6. Season and serve: Season the stew with salt and pepper to taste, stir well, and serve hot.

Notes

  • Rinsing lentils before cooking helps remove debris and reduces foaming during cooking.
  • For a thicker stew, simmer uncovered during the last 10 minutes to reduce liquid.
  • Serve with crusty bread or over rice for a complete meal.
  • Adjust spices to your preference for more heat or smokiness.
  • Use fresh spices for best flavor, but dried can be substituted.
