Instructions

  1. Melt the Butter and Cook Garlic: In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add the minced garlic cloves and cook for 1 to 2 minutes until the garlic is fragrant and slightly softened, being careful not to brown it.
  2. Add Cream and Seasonings: Pour in ¾ cup of heavy cream or your choice of milk or plant-based milk. Add ½ teaspoon salt, ¼ teaspoon black pepper, a pinch of nutmeg, and ¼ teaspoon dried oregano or other herbs. Bring the mixture to a gentle simmer.
  3. Simmer to Thicken Sauce: Reduce the heat to low and gently simmer the sauce for 3 to 5 minutes, stirring occasionally, until the sauce slightly thickens and coats the back of a spoon.
  4. Incorporate Parmesan: Stir in ¼ cup of grated Parmesan cheese if using. Taste the sauce and adjust the seasoning as needed to fit your preference.
  5. Finish and Store: Remove the sauce from heat. Use it warm on your pizza or let it cool completely before transferring to an airtight container and refrigerating. When ready to use after refrigeration, reheat gently while whisking to restore smoothness.
