Ingredients

Whipped Feta:

  • 200 g feta cheese
  • 60 g Greek yogurt or sour cream
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Cracked black pepper, to taste

Roasted Grapes:

  • 1½ cups red seedless grapes
  • 1 tsp olive oil
  • Pinch of salt

Toppings:

  • 3 tbsp walnut halves, toasted
  • 1½ tbsp hot honey (or honey + pinch of chili flakes)
  • Optional: fresh thyme leaves or chili threads

To Serve:

  • Warm pita, baguette slices, or seeded crackers

Instructions

  1. Preheat Oven and Roast Grapes: Preheat your oven to 200°C (390°F). Toss the red seedless grapes with 1 teaspoon of olive oil and a pinch of salt. Spread them out on a baking sheet and roast them for 18 minutes until they are blistered and juicy.
  2. Whip the Feta Mixture: In a blender or food processor, combine the feta cheese, Greek yogurt or sour cream, 1 tablespoon olive oil, lemon juice, and cracked black pepper. Whip the ingredients until the mixture is smooth and fluffy. Chill in the refrigerator if needed to keep cool.
  3. Toast the Walnuts: Heat a dry pan over medium heat and toast the walnut halves until fragrant and lightly browned, about 3 to 5 minutes. Remove from heat and roughly chop if desired for easier eating.
  4. Assemble the Dish: Spoon the whipped feta into a shallow serving bowl. Top it evenly with the roasted grapes along with any juices that came from roasting. Scatter the toasted walnuts over the top for crunch.
  5. Finish with Hot Honey and Garnishes: Drizzle generously with hot honey or a combination of honey and chili flakes for a spicy kick. Optionally, sprinkle fresh thyme leaves or chili threads over the dish for added flavor and visual appeal.
  6. Serve: Enjoy immediately with warm pita bread, baguette slices, or seeded crackers for dipping and spreading.
