Ingredients
Watermelon Fries
1 small seedless watermelon
Tajín seasoning (optional)
Fresh mint (optional, for garnish)
Coconut Lime Dip
½ cup coconut yogurt
1 tablespoon lime juice
1 teaspoon lime zest
1 tablespoon maple syrup
Pinch of sea salt
Instructions
Slice the watermelon: Cut the watermelon into thick rounds and then slice each round into fry-like sticks about 1 inch wide.
Season the watermelon: Optionally sprinkle the watermelon sticks with Tajín seasoning for a spicy and tangy kick, adjusting the amount to taste.
Prepare the dip: In a small bowl, whisk together coconut yogurt, lime juice, lime zest, maple syrup, and a pinch of sea salt until the mixture is smooth and creamy.
Chill the dip: Place the coconut lime dip in the refrigerator and chill for at least 10 minutes to allow the flavors to meld and to serve it cold.
Serve: Arrange the watermelon fries on a serving platter, place the chilled coconut lime dip on the side, and garnish with fresh mint leaves if desired for a refreshing finish.
Notes
For a non-vegan option, use Greek yogurt instead of coconut yogurt in the dip.
Tajín seasoning adds a nice spicy and tangy flavor but can be omitted for a milder taste.
Ensure the watermelon is firm and not overly ripe for best fry-like texture.
Maple syrup can be substituted with honey if not vegan.
Dip may be prepared ahead of time and kept refrigerated for up to 24 hours.
