Sweet Chilli Marinated Mussels offer an easy gourmet indulgence with a perfect balance of spicy, sweet, and savory flavors. Using frozen shelled mussel meat, this quick and simple recipe marinates mussels in a vibrant blend of chili garlic sauce, sweet chili sauce, soy sauce, and sake or white wine, resulting in a refreshing and flavorful appetizer or light meal.

Ingredients

For the Mussels

  • 500 g Frozen Shelled Mussel Meat

For the Marinade

  • 0.25 cup Sake OR White Wine
  • 1 tbsp Chilli Garlic Sauce
  • 2 tbsp Sweet Chilli Sauce
  • 0.5 to 1 tbsp Soy Sauce

Instructions

  1. Prepare the Marinade: In a large bowl, combine the chilli garlic sauce, sweet chilli sauce, and soy sauce. Stir the ingredients until they are well blended to create a flavorful marinade that balances spice and sweetness.
  2. Cook the Mussels: In a pot or large saucepan, add the sake and frozen shelled mussels. Cook over medium to high heat for about 3 to 5 minutes, shaking occasionally to ensure even heating, until the mussels are thoroughly heated through.
  3. Drain and Combine: Optionally drain the cooked mussels, reserving the cooking liquid for use in another dish if desired. Add the hot mussels directly into the prepared marinade, tossing them gently so they are evenly coated with the sauce.
  4. Marinate: Allow the mussels to marinate for at least 1 hour to let the flavors meld. For a deeper flavor, refrigerate and marinate overnight. Serve the mussels chilled for the best taste and texture experience.

Notes

  • You can substitute sake with white wine depending on availability and preference; both add depth to the marinade.
  • Adjust soy sauce quantity between 0.5 to 1 tbsp to control the saltiness and umami according to your taste.
  • Keep the reserved liquid from cooking mussels to enhance seafood soups or sauces.
  • The marinating time can be extended overnight for stronger flavor infusion.
  • For best results, serve the mussels chilled as an appetizer or light dish.
