This Spicy Jalapeño Popper Soup combines the creaminess of classic jalapeño poppers with a hearty chicken soup base. Loaded with diced jalapeños, shredded chicken, cream cheese, and melted cheddar, this comforting soup offers a perfect balance of heat and richness, topped with crispy bacon and fresh cilantro for extra flavor and texture.

Ingredients

Vegetables and Aromatics

  • 4 jalapeños, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced

Protein

  • 1 lb (450 g) chicken breast, cooked and shredded

Liquids

  • 1.4 litres chicken broth
  • 1 cup (240 ml) heavy cream

Dairy

  • 225 g cream cheese, softened
  • 1 cup (110 g) cheddar cheese, shredded

Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Toppings

  • 1/4 cup (30 g) bacon, cooked and crumbled
  • Fresh cilantro, for garnish

Instructions

  1. Sauté Vegetables: In a large pot over medium heat, sauté diced jalapeños and chopped onion until softened, about 5 to 7 minutes. Add minced garlic and cook for an additional 1 minute until fragrant.
  2. Simmer Soup Base: Pour in chicken broth and bring to a gentle boil. Add shredded chicken breast, salt, black pepper, and dried oregano. Reduce heat and let the soup simmer for 10 minutes to develop flavor.
  3. Add Creaminess: Stir in softened cream cheese and heavy cream. Whisk continuously until the cream cheese is fully melted and the mixture is smooth. Then sprinkle in shredded cheddar cheese and stir until it melts completely and the soup is well combined.
  4. Serve and Garnish: Ladle the soup into bowls and top each serving with crumbled cooked bacon and fresh cilantro for a burst of flavor and texture.

Notes

  • Adjust the number of jalapeños to control the spiciness of the soup.
  • Use cooked chicken breast from leftovers or rotisserie chicken for quick preparation.
  • For a thicker soup, reduce the amount of chicken broth slightly or simmer longer.
  • Substitute cheddar cheese with pepper jack for extra heat.
  • This soup can also be made ahead and reheated gently on the stovetop.
