Ingredients

Dough:

  • 1 1/2 cups warm water (110°F)
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 4 cups all-purpose flour
  • 2 tbsp unsalted butter (melted)

Boiling and Topping:

  • 2/3 cup baking soda
  • 1 egg (beaten, for egg wash)
  • Coarse salt (for topping)

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the warm water, active dry yeast, and brown sugar. Let it sit for 5 minutes until it becomes foamy. Then add the salt, all-purpose flour, and melted unsalted butter. Knead the mixture until a smooth and elastic dough forms, about 7-10 minutes by hand or 5 minutes with a mixer.
  2. Let the Dough Rise: Place the dough in a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place until doubled in size, approximately 1 hour.
  3. Shape the Pretzel Bites: Punch down the risen dough and roll it out on a floured surface into a long rope about 1 inch thick. Cut the rope into bite-sized pieces, roughly 1 to 1 1/2 inches each.
  4. Prepare Baking Soda Bath: Preheat the oven to 425°F (220°C). In a large pot, bring water to a boil and carefully add the 2/3 cup of baking soda. Reduce to a simmer once boiling.
  5. Boil the Pretzel Bites: Using a slotted spoon, gently drop a few pretzel bites at a time into the baking soda bath. Boil each batch for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.
  6. Egg Wash and Season: Brush each pretzel bite with the beaten egg to give them a shiny finish and sprinkle generously with coarse salt.
