Ingredients

Egg Mixture

  • 4 large eggs
  • 2 Tablespoons heavy cream or milk

Cooking

  • Salt and black pepper, to taste
  • 2 Tablespoons fresh chives, chopped (optional)

Instructions

  1. Whisk the eggs: Crack the eggs and pour them into a small bowl along with the heavy cream or milk. Whisk vigorously for 1 minute until the mixture is fully combined and slightly frothy.
  2. Melt the butter: Place a nonstick skillet over medium-low heat and add the unsalted butter. Allow the butter to melt and begin foaming gently, being careful not to brown it.
  3. Pour and start cooking: Pour the whisked eggs into the skillet. Using a fork, gently whisk the top of the eggs without disturbing the bottom, especially if using a smaller pan. Let the eggs cook undisturbed for 30 to 60 seconds.
  4. Add cheese and fold: Sprinkle the shredded cheddar cheese evenly over the cooking eggs. Using a spatula, gently push the eggs from the edges toward the center, folding them occasionally. Alternate between letting the eggs rest for the bottom to set and pushing the eggs around for about 2 minutes total, until the cheese melts and eggs are barely set.
  5. Season and garnish: Remove the skillet from heat once the eggs are soft and creamy. Season with salt and black pepper to taste. Garnish with chopped fresh chives if desired, then serve immediately.
