A delicious and hearty Savory Winter Vegetable Frittata featuring a medley of seasonal vegetables, eggs, and optional cheese, perfect for a nutritious breakfast or brunch during colder months.

Ingredients

For the Frittata

  • 8 large eggs
  • 1/4 cup milk (or a dairy-free alternative)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (or fresh thyme, chopped)
  • 1 tablespoon olive oil
  • 1 cup diced winter vegetables (such as sweet potatoes, butternut squash, or kale)
  • 1/2 cup diced onion
  • 1/2 cup bell pepper (any color, diced)
  • 1/2 cup shredded cheese (such as cheddar, feta, or goat cheese, optional)

For Garnish (Optional)

  • Fresh herbs (such as parsley or chives)
  • Sliced avocado
  • Hot sauce

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the frittata.
  2. Whisk Eggs: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and thyme until well combined and slightly frothy.
  3. Sauté Vegetables: Heat the olive oil in a large oven-safe skillet over medium heat. Add the diced onion and bell pepper and sauté for 3-4 minutes until they begin to soften. Stir in the diced winter vegetables and cook for an additional 5-7 minutes until tender.
  4. Combine and Cook: Pour the egg mixture evenly over the sautéed vegetables in the skillet, gently stirring to distribute. Sprinkle the shredded cheese on top if using. Cook on the stovetop for 2-3 minutes until the edges begin to set.
  5. Bake the Frittata: Transfer the skillet to the preheated oven and bake for 20 minutes or until the frittata is puffed up and set in the center. Test doneness by inserting a toothpick which should come out clean.
  6. Cool and Serve: Allow the frittata to cool for a few minutes before slicing. Garnish with fresh herbs, sliced avocado, or a drizzle of hot sauce if desired. Serve warm and enjoy.

Notes

  • Use an oven-safe skillet such as cast iron for best results when baking the frittata.
  • Substitute winter vegetables with any preferred vegetables if desired.
  • For a dairy-free option, use a non-dairy milk and omit cheese or use a vegan cheese alternative.
  • Fresh thyme can replace dried thyme for a more vibrant flavor.
  • Leftovers can be refrigerated and reheated the next day for an easy meal.
