Rice Krispie Footballs are a fun and festive treat made by combining classic marshmallow rice cereal with a chocolate coating and decorative white laces to resemble mini footballs. Perfect for game day snacks or parties, these no-bake treats are easy to shape and decorate.

Ingredients

  • 6 cups Rice Krispies cereal
  • 3 tbsp unsalted butter
  • 1 (10 oz) bag mini marshmallows
  • ½ tsp vanilla extract

Coating and Decoration

  • 1½ cups semi-sweet chocolate chips or melting wafers
  • White icing or melted white chocolate (for "laces")

Instructions

  1. Melt the Base: In a large pot, melt the butter over low heat. Add the mini marshmallows and stir continuously until the mixture is smooth and fully melted. Remove the pot from heat and stir in the vanilla extract for added flavor.
  2. Mix In Cereal: Add the Rice Krispies cereal to the marshmallow mixture and gently fold until the cereal is completely coated. Allow the mixture to cool for 2 to 3 minutes so it’s easier to handle.
  3. Shape the Footballs: Lightly grease your hands to prevent sticking, then shape handfuls of the mixture into football-shaped ovals. Place each shaped football onto a parchment-lined baking sheet to prepare for coating.
  4. Coat with Chocolate: Melt the semi-sweet chocolate chips or melting wafers in the microwave in 30-second intervals, stirring after each until smooth. Dip each football into the melted chocolate or spoon the chocolate over the top until fully coated, allowing any excess chocolate to drip off.
  5. Add the Laces: Using a piping bag or a ziplock bag with the tip snipped off, pipe white icing or melted white chocolate onto the coated footballs to create the iconic football laces. Place the finished footballs in the refrigerator and chill for 15 to 20 minutes until the chocolate and icing have set.

Notes

  • Greasing your hands helps prevent the sticky mixture from clinging when shaping the footballs.
  • If vanilla extract is unavailable, you can omit it without greatly affecting the flavor.
  • Use parchment paper to easily remove footballs from the baking sheet once set.
