This Pizza Grilled Cheese lunch recipe combines the comforting flavors of a classic grilled cheese sandwich with the zesty taste of pizza. Featuring melted mozzarella and Parmesan cheeses, spicy turkey pepperoni, and a tangy marinara sauce spread between crispy, seasoned bread slices, this sandwich is perfect for a quick and satisfying meal.

Ingredients

Bread and Butter

  • 4 slices of bread (sourdough, white, or whole wheat)
  • 2 tbsp butter (softened)

Pizza Filling

  • ½ cup marinara or pizza sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 12 slices of turkey pepperoni (or your preferred topping)
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • 2 tbsp chopped fresh basil (optional)

Instructions

  1. Prepare the Bread: Spread a thin layer of softened butter on one side of each slice of bread. Evenly sprinkle garlic powder and Italian seasoning over the buttered side to infuse extra pizza flavor as the bread toasts.
  2. Assemble the Sandwich: Place two bread slices buttered side down on a flat surface. Spread marinara sauce inside each slice. Layer shredded mozzarella cheese, grated Parmesan, turkey pepperoni slices, and optional additional toppings. Top with the remaining bread slices, buttered side up.
  3. Toast the Sandwich: Heat a skillet or griddle over medium-low heat. Place the sandwiches in the pan and cook for 3-4 minutes on each side, pressing down gently with a spatula to help melt the cheese and brown the bread. Flip carefully to avoid spilling the filling. Continue cooking until the bread is golden brown and the cheese is fully melted.
  4. Serve and Enjoy: Remove the sandwiches from the skillet and let them cool for a minute. Slice in half and garnish with fresh chopped basil for extra flavor. Serve with a side of marinara sauce for dipping.

Notes

  • Use bread types of your choice such as sourdough, white, or whole wheat.
  • Adjust pepperoni or toppings according to preference or dietary restrictions.
  • For a crispier sandwich, cook on medium-low heat to avoid burning.
  • Fresh basil is optional but adds a nice herbaceous touch.
  • Serve immediately to enjoy melted cheese and crispy bread.
