This rich and creamy Pistachio Fudge recipe features smooth white chocolate combined with sweetened condensed milk and crunchy pistachios for a delightful homemade treat. Perfectly sweet with a hint of vanilla, and optionally colored green for a festive touch, this fudge sets easily in the refrigerator and makes for a decadent dessert or gift.

Ingredients

Fudge Mixture

  • 2 cups white chocolate chips (about 12 oz)
  • 1 can sweetened condensed milk (14 oz)
  • 1 teaspoon vanilla extract
  • a pinch salt
  • 1 cup shelled pistachios, roughly chopped
  • green food coloring (optional, for color)

Instructions

  1. Prepare the pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides to easily remove the fudge once set.
  2. Melt chocolate and milk: In a medium saucepan over medium-low heat, combine the white chocolate chips and sweetened condensed milk. Stir continuously to ensure the mixture becomes smooth and fully melted without burning.
  3. Add flavorings and nuts: Remove the saucepan from heat and stir in the vanilla extract, a pinch of salt, and the chopped pistachios. If desired, add a few drops of green food coloring to give the fudge a festive hue and mix well.
  4. Pour and spread mixture: Transfer the fudge mixture into the prepared baking dish and use a spatula to spread it evenly across the pan.
  5. Chill to set: Place the baking dish in the refrigerator and chill for at least 2 hours until the fudge is firm and fully set.
  6. Cut and serve: Using the parchment paper overhang, lift the fudge out of the pan and cut it into 16 equal squares. Serve and enjoy your homemade pistachio fudge!

Notes

  • For easier chopping, chill pistachios beforehand.
  • Use high-quality white chocolate for the best taste and texture.
  • You can substitute green food coloring with matcha powder for a natural color and extra flavor.
  • Store fudge in an airtight container in the refrigerator for up to one week.
  • Let fudge sit at room temperature for 5-10 minutes before eating for a creamier texture.
