No-bake Coconut Cream Lush is a creamy, tropical dessert featuring a graham cracker crust layered with a rich coconut cream filling, whipped topping, and sweetened condensed milk. Perfect for warm days when you want a delicious treat without turning on the oven.

Ingredients

Crust

  • 1 cup graham cracker crumbs
  • ½ cup unsalted butter (melted)

Filling

  • 1 can (13.5 oz) full-fat coconut cream
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon pure vanilla extract

Topping

  • 2 cups whipped topping

Instructions

  1. Prepare the base: Mix graham cracker crumbs and melted butter thoroughly, then press evenly into the bottom of a 9x13-inch pan to form the crust layer.
  2. Combine the filling: In a separate bowl, blend coconut cream and sweetened condensed milk until the mixture is smooth. Stir in the vanilla extract to enhance the flavor.
  3. Fold in whipped topping: Gently fold the whipped topping into the coconut mixture until fully incorporated for a light, airy texture.
  4. Layer: Spread half of the coconut filling over the crust layer. Add a layer of whipped topping on top, then spread the remaining coconut filling evenly over that.
  5. Chill: Cover the pan and refrigerate for at least four hours or preferably overnight to allow the dessert to set properly.
  6. Serve: Once chilled and set, cut the dessert into squares and garnish as desired before serving.

Notes

  • Use full-fat coconut cream for the creamiest texture; light versions may result in a thinner filling.
  • You can substitute graham cracker crumbs with digestive biscuits if desired.
  • For a dairy-free version, use coconut-based whipped topping and check sweetened condensed milk alternatives.
  • Allow ample chilling time to ensure the dessert firms up well for clean slicing.
  • Garnish options include toasted coconut flakes, shredded coconut, or fresh fruit like pineapple or mango for extra flavor.
