Maple Bacon Carrots are a delicious side dish featuring tender roasted carrots wrapped in crispy bacon and glazed with sweet maple syrup. This easy-to-make recipe combines savory and sweet flavors, perfect for pairing with any main course.

Ingredients

Vegetables

  • 2 pounds carrots, less than ½ inch thick, peeled

Meat

  • 1 pound thin-sliced bacon

Condiments

  • ¼ cup maple syrup

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to ensure it's hot enough for roasting the bacon-wrapped carrots.
  2. Wrap Carrots: Take one slice of thin-sliced bacon and tightly wrap it around each peeled carrot, starting at the thick end. Avoid overlapping the bacon layers to help it cook evenly and crisp up nicely.
  3. Arrange on Rack: Place the bacon-wrapped carrots on a wire rack set over a baking sheet. This allows air circulation for even cooking and crisping of the bacon.
  4. Bake First Stage: Bake the carrots in the preheated oven for 25 minutes until the bacon is crispy and the carrots are tender.
  5. Glaze with Maple Syrup: Remove the baking sheet from the oven and carefully brush or drizzle maple syrup over all sides of the bacon-wrapped carrots to add a sweet, glossy finish.
  6. Bake Second Stage: Return the carrots to the oven and bake for an additional 10 minutes to caramelize the maple syrup glaze and finish cooking.
  7. Serve: Remove from the oven and let the carrots cool slightly before serving warm as a flavorful side dish.

Notes

  • Choose thin carrots for easier wrapping and even cooking.
  • Use a wire rack to allow bacon fat to drip away, creating crispier bacon.
  • If you prefer less sweetness, reduce the maple syrup to 2 tablespoons.
  • For a smoky flavor, consider using smoked bacon.
  • Leftovers can be refrigerated and reheated in the oven to keep bacon crispy.
