Ingredients

Cauliflower Mash

  • 1 large head of cauliflower, cut into florets
  • 2 cloves garlic, minced
  • 2 tablespoons Greek yogurt
  • 1 tablespoon olive oil

  • ½ teaspoon black pepper
  • ½ teaspoon onion powder

Garnish

  • 1 tablespoon chopped chives or parsley

Instructions

  1. Steam the cauliflower: Place the cauliflower florets into a steamer basket and steam until very soft, about 10-12 minutes. Test doneness by inserting a fork; it should slide in easily.
  2. Season the cauliflower: Transfer the hot cauliflower to a mixing bowl. Add minced garlic, Greek yogurt, olive oil, sea salt, black pepper, and onion powder. Mix well to combine.
  3. Blend until smooth: Using a blender, food processor, or potato masher, blend or mash the cauliflower mixture until creamy and smooth. Add a splash of warm water if needed to achieve your desired consistency.
