An easy and delicious Grilled Cheese Burrito combining seasoned ground beef, flavorful taco spices, creamy nacho and chipotle sauces, rice, and gooey melted cheeses all wrapped in a warm flour tortilla and grilled to crispy perfection. Perfect for a quick and satisfying lunch.

Ingredients

Meat and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)

Fillings

  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Wrap and Cooking

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: In a skillet over medium heat, brown the ground beef until fully cooked, about 8–10 minutes. Drain any excess grease. Add taco seasoning and ¼ cup water, then simmer the mixture for 5 minutes to develop flavors.
  2. Warm the Tortillas: Heat the flour tortillas either on a dry skillet or in the microwave until they become soft and flexible for easy rolling.
  3. Assemble the Burrito: Lay one warm tortilla flat and layer it evenly with cooked rice, the seasoned ground beef, nacho cheese sauce, chipotle sauce, and sour cream. Sprinkle shredded cheddar and mozzarella cheeses on top.
  4. Grill the Burrito: Heat a clean skillet and lightly grease it with butter or oil. Sprinkle about 2 tablespoons of shredded cheese onto the skillet, then place the burrito seam-side down over the cheese. Cook for 3–4 minutes per side until the cheese melts and forms a crispy, golden crust. Flip carefully and repeat on the other side to achieve a perfectly grilled burrito.

Notes

  • Use freshly cooked rice for the best texture in the burrito.
  • Adjust taco seasoning according to your preferred spice level.
  • You can substitute the chipotle sauce with your favorite hot sauce or salsa for variation.
  • Grilling the burrito seam-side down first helps seal the wrap and prevent it from unrolling.
  • Butter adds extra flavor and crispiness when grilling, but oil works well too.
