Ingredients

For the Mushrooms:

  • 400 grams sliced cremini mushrooms
  • 2 tablespoons salted butter

  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

For Cheese Spread Mixture:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons melted butter
  • 2 cloves garlic, finely minced
  • 1 tablespoon dried onion flakes
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated parmesan cheese
  • 1/2 cup grated havarti cheese
  • 1/2 cup grated swiss cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup green onions, thinly sliced

  • 4 slices sourdough bread

Instructions

  1. Sauté Mushrooms: In a large skillet over medium-high heat, add olive oil and butter. Once melted, add sliced cremini mushrooms, salt, and ground black pepper. Stir to coat mushrooms in the mixture and cook for 5 minutes.
  2. Add Worcestershire Sauce: Stir in Worcestershire sauce and continue cooking mushrooms for another 5 minutes until they turn a deep brown color. Remove from skillet and transfer to a plate to cool. Separate the better-looking mushroom slices and set aside, leaving broken or smaller pieces behind.
  3. Prepare Cheese Spread: In a bowl, whisk together mayonnaise, sour cream, and melted butter until combined. Add minced garlic, dried onion flakes, and ground black pepper; stir to incorporate. Fold in parmesan, havarti, swiss, mozzarella cheeses, and sliced green onions until evenly dispersed.
  4. Toast Bread: Arrange sourdough slices in a single layer on a large sheet pan. Place under the broiler until the first side is lightly browned. Flip and toast the other side similarly. Allow bread to cool slightly until just warm to the touch.
  5. Combine Mushrooms and Cheese Spread: Fold the cooled sautéed mushrooms (not the reserved slices) into the cheese mixture. Spread this mixture evenly over each slice of toasted bread.
  6. Add Reserved Mushrooms and Broil: Top each toast with the reserved mushroom slices. Return the sheet pan to the broiler and cook for 3-5 minutes at 500 degrees F, watching carefully until the cheese bubbles and is golden brown without burning.
  7. Garnish and Serve: Sprinkle additional sliced green onions on top and serve the toasts immediately while warm and cheesy.
