A refreshing and delicious Strawberry Parfait recipe featuring layers of macerated fresh strawberries, creamy Greek yogurt mixed with honey, whipped heavy cream, and crunchy granola or crushed biscuits. Perfect for a light breakfast, dessert, or snack, this no-cook parfait offers a perfect balance of sweet, creamy, and crunchy textures.

Ingredients

Strawberry Layer

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar (optional, for macerating the berries)
  • 1 teaspoon fresh lemon juice

Cream Layer

  • 1 cup Greek yogurt, plain or vanilla
  • ½ cup heavy cream, whipped to soft peaks
  • 2 tablespoons honey or maple syrup

Crunch Layer

  • 1 cup granola or crushed digestive biscuits
  • 2 tablespoons chopped nuts (optional, for extra crunch)

Instructions

  1. Prepare the Strawberries: Hull and slice your fresh strawberries into even pieces. In a small bowl, toss the strawberries with sugar (if using) and lemon juice. Let the berries sit for 5–10 minutes to macerate, making them juicier and sweeter.
  2. Whip the Cream: Pour the heavy cream into a mixing bowl. Using a whisk or electric mixer, whip the cream until soft peaks form. Chilling the bowl and whisk beforehand helps the cream whip faster.
  3. Mix the Yogurt Layer: In another bowl, combine Greek yogurt with honey or maple syrup. Stir gently until smooth and creamy.
  4. Assemble the Parfaits: Start by spooning a layer of the yogurt mixture into the bottom of your parfait glasses or jars. Add a layer of granola or crushed biscuits on top of the yogurt. Spoon a layer of macerated strawberries over the granola. Repeat the layers until the glass is full, ending with a few strawberries on top for garnish. Press layers down gently with the back of a spoon to create clean, even layers.
  5. Add Final Touches: Sprinkle chopped nuts or drizzle a little honey over the top layer if desired. Chill in the fridge for 30 minutes to let the flavors meld together. Serve cold for the best texture and fresh strawberry flavor.

Notes

  • Use fresh, ripe strawberries for the best flavor and sweetness.
  • Macerating the strawberries enhances their natural sweetness and juiciness but is optional.
  • You can substitute granola with crushed digestive biscuits or cookies for different textures.
  • Whipping cream to soft peaks is essential to achieve a light and airy cream layer.
  • Parfaits can be assembled ahead and refrigerated for up to 4 hours before serving to allow flavors to meld.
  • For a vegan version, substitute Greek yogurt with a plant-based alternative and use coconut cream instead of heavy cream.
