A refreshing and aromatic Earl Grey Bubble Tea recipe using oat milk and homemade tapioca pearls sweetened with brown sugar syrup. Perfect for a cool, sweet treat with a fragrant tea base.

Ingredients

Milk Tea

  • 625 g dairy or non-dairy milk (preferably oat milk)
  • 4 Earl Grey tea bags

Tapioca Pearls and Syrup

  • 100 g tapioca pearls
  • 50 g brown sugar
  • 1-2 tablespoons water (for syrup adjustment)

Serving

  • Ice (as needed)

Instructions

  1. Steep Tea: In a small pot, combine the milk and Earl Grey tea bags. Bring to a simmer over medium heat. Once simmering, turn off the heat, cover the pot, and let the tea steep for 10 minutes to infuse the milk with the tea aroma.
  2. Extract Tea Flavor: Use the back of a spoon to press the tea bags against the pot side, extracting all the tea-infused milk before discarding the bags. Transfer the milk tea to a glass container with a spout, cover, and chill in the refrigerator until cold.
  3. Prepare Tapioca Pearls: Rinse the pot and fill it with about 1 inch of water. Bring to a rolling boil over high heat. Add the tapioca pearls immediately, stirring gently to prevent them from sticking together. Boil uncovered for 15 minutes.
  4. Sit and Soak Pearls: Remove the pot from the heat, cover, and let the tapioca pearls sit for an additional 15 minutes to fully cook and soften.
  5. Make Brown Sugar Syrup: Place the brown sugar in a small bowl. Use a slotted spoon to transfer the cooked pearls to the sugar, draining most of the cooking liquid. Stir well; the heat from the pearls will dissolve the sugar, creating a syrup. If the mixture is too dry, add 1-2 tablespoons of water to adjust the consistency.
  6. Assemble the Drink: In each serving glass, add about 100 g of tapioca pearls with syrup. Fill the glass about three-quarters to full with ice. Pour approximately 300 g of the chilled Earl Grey milk tea over the pearls and ice. Stir well to combine.
  7. Adjust Sweetness: Taste the drink and add any leftover brown sugar syrup to enhance sweetness if desired. Serve immediately and enjoy.
