Ingredients

Bacon

  • 6 slices thick-cut bacon

Bread

  • 4 slices rustic sourdough bread (or brioche, ciabatta, or artisan bread)
  • 1 teaspoon olive oil (optional, for toasting bread)

Vegetables & Extras

  • 1–2 ripe heirloom tomatoes, sliced
  • A handful of butter lettuce or arugula
  • ½ avocado, sliced (optional)

Condiments & Seasoning

  • 2 tablespoons garlic aioli or good-quality mayo
  • Freshly ground black pepper, to taste
  • Pinch of flaky sea salt

Instructions

  1. Cook the Bacon: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil, then lay the bacon slices in a single layer. Bake for 15 to 18 minutes until the bacon is crispy. Remove and drain on paper towels to remove excess grease.
  2. Toast the Bread: Lightly brush both sides of each slice of bread with olive oil if you like for extra flavor and crispness. Toast the bread in a skillet over medium heat or in a toaster oven until each side is golden and crisp.
  3. Prep the Vegetables: Slice the heirloom tomatoes and sprinkle them with a pinch of flaky sea salt to enhance their flavor. Wash and dry the butter lettuce or arugula thoroughly. If using avocado, slice it thinly.
  4. Assemble the Sandwich: Spread a generous layer of garlic aioli on the toasted bread slices. Start layering the sandwich with butter lettuce, followed by the salted tomato slices, then three slices of crispy bacon per sandwich, and avocado slices if using. Season with freshly ground black pepper. Finish by placing the second slice of bread on top.
  5. Serve: Cut each sandwich diagonally in half for easier eating. Serve immediately alongside chips, a fresh salad, or a bowl of soup for a complete meal.

Notes

  • Use thick-cut bacon for a more substantial and flavorful sandwich.
  • Heirloom tomatoes add sweetness and color but any ripe tomato will work.
  • Avocado is optional but adds creaminess and extra nutrients.
  • Garlic aioli can be substituted with your favorite good-quality mayonnaise or a flavored mayo.
  • To keep bread crispy, toast it just before assembling the sandwich.
