These Chocolate Peanut Butter Brownie Bites are rich, fudgy, and packed with chocolate goodness, featuring a gooey peanut butter center. Perfectly portioned as bite-sized treats, they combine the deep flavor of semi-sweet and milk chocolate with creamy peanut butter, baked to perfection for a delightful dessert or snack.

Ingredients

Brownie Batter

  • 3/4 cup granulated sugar
  • 1/4 cup butter, softened
  • 1 tablespoon water
  • 1 cup semi-sweet chocolate chips or chocolate bar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 3/4 cup milk chocolate chips

Peanut Butter Filling

  • 1/2 cup creamy peanut butter

Instructions

  1. Heat Sugar, Butter, and Water: In a microwave-safe bowl, combine the granulated sugar, softened butter, and water. Microwave in 45-second increments, stirring in between, until the butter is melted and the mixture is hot.
  2. Melt Semi-Sweet Chocolate: Add the 1 cup semi-sweet chocolate chips to the warm mixture and stir until the chocolate is completely melted and smooth. Microwave for a few more seconds if needed and stir again.
  3. Add Egg and Vanilla: Stir in the egg and vanilla extract until the mixture is well combined and homogeneous.
  4. Mix in Dry Ingredients: Add the all-purpose flour and baking soda, mixing just until the batter is combined and smooth. The batter will be thick and glossy, so avoid overmixing.
  5. Cool Batter Slightly: Allow the batter to cool at room temperature for about 5–10 minutes to avoid melting the milk chocolate chips in the next step.
  6. Incorporate Milk Chocolate Chips: Gently fold in the 3/4 cup milk chocolate chips until they are evenly distributed throughout the batter.
  7. Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C). Grease a muffin tray or line with paper liners to prevent sticking.
  8. Fill Muffin Cups: Spoon the batter into the muffin cups, filling each about 3/4 full to allow room for rising.
  9. Bake the Brownie Bites: Bake for 14–16 minutes or until the tops look set and a toothpick inserted near the edge comes out mostly clean with some moist crumbs.
  10. Cool and Create Wells: Remove the tray from the oven and let the brownie bites cool in the pan for about 5 minutes. If the centers do not sink naturally, gently press the center of each brownie with the back of a tablespoon to create a small well for the filling.
  11. Melt Peanut Butter: Place the creamy peanut butter in a microwave-safe bowl and microwave in short bursts until melted and smooth.
  12. Fill with Peanut Butter: Spoon about 1 tablespoon of melted peanut butter into the center of each well-filled brownie bite. Optionally, top with additional chocolate chips.
  13. Cool and Serve: Allow the brownie bites to cool until the peanut butter thickens slightly. Serve warm or at room temperature for best flavor and texture.

Notes

  • Use paper liners if you want easier removal from the pan and less cleanup.
  • If peanut allergy is a concern, substitute with sunflower seed butter or omit the peanut butter filling.
  • Make sure not to overbake to keep the brownie bites fudgy and moist inside.
  • You can prepare the batter ahead and refrigerate before baking, but adjust baking time if chilled.
  • For a richer flavor, use high-quality chocolate chips or bars for both types of chocolate.
