Delicious and easy-to-make Chocolate Chip Rice Krispies combines the classic crispy marshmallow treat with semi-sweet chocolate chips for a delightful twist. Perfect as a sweet snack or dessert, these bars are ready in minutes and loved by all ages.

Ingredients

Main Ingredients

  • 3 tablespoons unsalted butter
  • 1 package (10 oz) marshmallows or 4 cups mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1 cup semi-sweet chocolate chips
  • Pinch of salt (optional)

Instructions

  1. Melt Butter and Marshmallows: In a large saucepan, melt the butter over low heat. Add the marshmallows and stir continuously until they are completely melted and smooth. Remove the saucepan from heat immediately to prevent burning.
  2. Mix in Cereal: Gradually add the Rice Krispies cereal to the melted marshmallow mixture, stirring gently but thoroughly until all the cereal is evenly coated with the marshmallow.
  3. Add Chocolate Chips: Gently fold in the semi-sweet chocolate chips, distributing them evenly without allowing them to melt fully.
  4. Shape and Cool: Using a buttered spatula or wet hands, firmly press the mixture into a 13×9 inch pan that has been coated with cooking spray. Smooth the top evenly and let it cool and set for about 30 minutes at room temperature.
  5. Cut and Serve: Once the mixture has set, use a sharp, buttered knife to cut into squares. Serve immediately or store in an airtight container for later enjoyment.

Notes

  • For softer bars, use mini marshmallows instead of large marshmallows.
  • Lightly buttering the spatula or your hands prevents sticking when pressing the mixture into the pan.
  • To avoid melted chocolate chips, fold them in after the mixture cools slightly.
  • Add a pinch of salt to balance the sweetness if desired.
  • Store leftovers in an airtight container at room temperature for up to 3 days for best freshness.
