This refreshing Frozen Cherry Coke Slushie is a delightful icy treat combining the classic taste of Coca-Cola with the tartness of lime juice and frozen cherries. Enhanced optionally with bourbon, dark rum, or Campari, this slushie is perfect for warm days or casual get-togethers, offering a smooth, icy texture and vibrant flavors.

Ingredients

Main Components

  • 28 ounces chilled Coca-Cola, divided
  • Juice of 2 limes
  • 1/2 cup bourbon, dark rum, or Campari (optional)
  • 2 cups frozen, pitted cherries

Garnishes

  • 1 lime, sliced into thin wheels
  • Maraschino cherries (optional)

Instructions

  1. Freeze the Coca-Cola cubes: Pour 12 ounces (1 1/2 cups) of chilled Coca-Cola into ice cube trays and freeze until solid, about 3 to 4 hours. This will form the icy base for your slushie.
  2. Prepare the slushie mix: In a blender, combine the juice of 2 limes, 1/2 cup bourbon or your preferred spirit if using, and the remaining 16 ounces (2 cups) of chilled Coca-Cola. Add the frozen Coca-Cola cubes along with 2 cups of frozen, pitted cherries.
  3. Blend until smooth: Blend on high speed, scraping down the sides if needed, until the mixture becomes completely smooth and icy, approximately 1 to 2 minutes, creating a perfectly slushy texture.
  4. Serve and garnish: Pour the blended cherry Coke slushie evenly into chilled glasses. Garnish each glass with a thin lime wheel and maraschino cherries if desired for added color and flavor.

Notes

  • Freezing the Coca-Cola in advance is key to achieving the right slushy texture, so plan ahead.
  • The addition of bourbon, dark rum, or Campari is optional and can be omitted for a non-alcoholic version.
  • Adjust the amount of lime juice to taste for more or less tartness.
  • Using frozen cherries eliminates the need for extra ice, keeping the slushie flavorful and not diluted.
  • This recipe serves well for about 4 servings, depending on glass size.
