A delicious and comforting Cheesy Tortilla Lasagna Pie featuring layers of seasoned ground meat, creamy cheese, and tender tortillas baked to golden perfection. This easy-to-make dish combines Mexican flavors with classic lasagna styling, perfect for a family dinner or casual gathering.

Ingredients

Meat & Sauce

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper, to taste
  • 1 cup salsa or marinara
  • 1 can (10 oz) diced tomatoes with green chilies (optional)

Layers

  • 8 medium flour tortillas (or corn tortillas for gluten-free)
  • 2 cups shredded mozzarella
  • 1 cup shredded cheddar
  • ½ cup sour cream or ricotta
  • Optional: chopped bell peppers, spinach, or other vegetables

Instructions

  1. Preheat & Prep: Preheat your oven to 375°F (190°C). Lightly grease a 9-inch round cake pan, a deep pie dish, or a cast-iron skillet to prepare for layering.
  2. Cook Meat Filling: In a skillet over medium-high heat, cook the ground beef or turkey together with the diced onion until the meat is browned and the onion becomes soft. Add minced garlic, cumin, smoked paprika, salt, and pepper, and cook for another minute to release the flavors. Stir in the salsa and diced tomatoes with green chilies if using, then let the mixture simmer for 5 minutes until it thickens slightly.
  3. Layer the Pie: Begin by placing one tortilla on the bottom of your prepared pan. Spread a layer of the cooked meat sauce over it, then dollop sour cream or ricotta cheese on top. Sprinkle a mixture of mozzarella and cheddar cheeses over the creamy layer. Repeat these layers in the same order - tortilla, meat sauce, creamy cheese layer, cheese - until all tortillas and fillings are used, finishing with a tortilla on top covered generously with the remaining shredded cheese.
  4. Bake: Cover the assembled pie loosely with foil and bake in the preheated oven for 25 minutes. Remove the foil and continue baking for an additional 10 minutes, or until the cheese on top is melted, golden, and bubbly.
  5. Rest & Serve: Allow the lasagna pie to rest for 10 minutes after baking to set up for easy slicing. Serve warm, accompanied by salad, guacamole, or refried beans if desired.
