These Cheesy Ritz Crackers Party Snacks are a delightful and easy-to-make appetizer featuring a creamy blend of whipped cream cheese, sharp cheddar, garlic, and fresh veggies spread on crispy Ritz crackers and baked to golden perfection. Perfectly crispy edges with a warm, melty cheesy topping make them an irresistible treat for any gathering or party.

Ingredients

Base

  • 48 Ritz Crackers

Cheese Mixture

  • 1 (8 oz) block cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Vegetables & Garnish

  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped chives (half mixed into cheese mixture, half for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line one or two large baking sheets with parchment paper or silicone baking mats to prevent sticking and ensure easy cleanup.
  2. Arrange Crackers: Carefully place the 48 Ritz crackers in a single layer on the prepared baking sheet(s), leaving about half an inch of space between each cracker for even air circulation.
  3. Whip Cream Cheese: In a medium mixing bowl, beat the softened cream cheese with an electric hand mixer on medium speed for 1-2 minutes until light, fluffy, and smooth. Scrape down the sides as needed.
  4. Mix Filling: Add shredded sharp cheddar, garlic powder, chopped red bell pepper, and half of the chopped chives to the whipped cream cheese. Season with salt and black pepper to taste. Mix well until all ingredients are evenly combined.
  5. Spread Mixture: Using a small spoon or butter knife, spread about 1 teaspoon of the cheesy mixture onto the flat surface of each Ritz cracker, applying a generous layer without overflowing.
  6. Bake: Place the assembled crackers in the preheated oven and bake for 8-12 minutes until the crackers are golden brown and crisp around the edges, and the cheese is melted with a light golden hue.
  7. Cool and Garnish: Remove from oven and let cool on the baking sheets for 5 minutes to allow the cheese to set. Transfer to a serving platter and sprinkle the remaining chopped chives on top. Serve warm for the best flavor and texture.

Notes

  • Ensure the cream cheese is fully softened and at room temperature for easier whipping and a smoother mixture.
  • Do not overcrowd the crackers on the baking sheet to allow even baking.
  • Keep an eye on crackers during baking to prevent burning, as ovens vary.
  • Feel free to customize the cheese blend by adding other cheeses like Monterey Jack or Parmesan for unique flavors.
  • These snacks are best enjoyed fresh and warm but can be prepared ahead and baked just before serving.
