This delicious recipe features a block of feta cheese caramelized in a skillet and topped with a spicy-sweet chili-honey drizzle, toasted walnuts, and fresh herbs. Served warm with soft pita or crusty bread, this dish is perfect as an appetizer or savory snack that balances creamy, spicy, and sweet flavors.

Ingredients

For the Feta Block:

  • 1 block feta cheese (150–200 g), drained
  • 1 tablespoon olive oil

For the Hot Honey:

  • 4 tablespoons honey
  • ½ to 1 teaspoon chili flakes (to taste)
  • 1 teaspoon lemon juice

For the Topping:

  • 2 tablespoons walnuts, roughly chopped
  • Fresh thyme or rosemary (optional)
  • Cracked black pepper

To Serve:

  • Warm pita, flatbread, or crusty bread

Instructions

  1. Toast Walnuts: Toast the roughly chopped walnuts in a dry pan over medium heat for 3 to 4 minutes until they turn golden and release a fragrant aroma. Remove from heat and set aside to cool.
  2. Prepare Hot Honey: In a small saucepan, gently warm the honey with chili flakes and lemon juice over low heat until the mixture starts to bubble lightly. Remove from heat and keep warm to allow flavors to infuse.
  3. Dry and Sear Feta: Pat the block of feta cheese dry with paper towels to remove excess moisture. Heat olive oil in a nonstick or cast-iron skillet over medium heat. Carefully sear the feta block for 2 to 3 minutes on each side until it develops a golden crust.
  4. Caramelize with Hot Honey: While the feta remains in the skillet, carefully pour the warm chili-honey mixture over it. Allow it to sizzle and begin to caramelize, infusing the feta with sweet and spicy notes.
  5. Add Toppings and Serve: Sprinkle the toasted walnuts, fresh thyme or rosemary if using, and cracked black pepper over the caramelized feta. Serve immediately while hot alongside warm pita, flatbread, or crusty bread for dipping.

Notes

  • Adjust the chili flakes to your preferred level of heat.
  • Using a cast-iron skillet enhances the caramelization process.
  • Make sure to pat the feta dry to get a better sear and caramelization.
  • This dish is best served immediately while warm and gooey.
  • Fresh herbs like thyme or rosemary add an aromatic touch but are optional.
