Ingredients

Bread and Oil

  • 1 (10 inch long) sturdy French baguette, sliced diagonally about 1/2 inch thick

  • 1 small garlic clove, peeled and halved (optional)

Toppings

  • 8 ounces Brie Cheese, rind on, sliced about 1/4 inch thick
  • 1 medium crisp apple (Honeycrisp or Fuji), cored and thinly sliced
  • 1 teaspoon Fresh Thyme Leaves
  • Pinch of freshly ground Black Pepper
  • 3 Tablespoons Honey (for drizzling)

Instructions

  1. Preheat and slice bread: Preheat your oven to 375°F (190°C). Slice the baguette diagonally into pieces about 1/2 inch thick.
  2. Prepare bread for toasting: Arrange bread slices in a single layer on a baking sheet. Brush or drizzle lightly with olive oil on both sides.
  3. Toast and garlic rub: Bake the bread slices in the oven until lightly toasted, then immediately after removing them while still hot, gently rub the cut surface of each slice with the halved garlic clove for subtle flavor infusion.
  4. Add cheese and apple: Top each toasted bread slice with one slice of Brie cheese, covering most of the surface, then place 1-2 thin slices of apple on top of the Brie.
  5. Season and bake: Sprinkle fresh thyme leaves and a small crack of black pepper over the crostini. Return them to the oven and bake for 10 minutes or until the Brie is melted, soft, and just starting to bubble at the edges.
  6. Finish with honey: Remove the crostini carefully from the oven and immediately drizzle generously with honey over the melted cheese and apples.
