This Banana Cream Cheesecake features a smooth and creamy cream cheese filling layered with ripe bananas and a crunchy graham cracker crust. Topped with whipped cream, it’s a luscious dessert perfect for any occasion that combines the sweetness of bananas with rich, tangy cream cheese in a no-bake style cheesecake.

Ingredients

Crust

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup melted butter

Filling

  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2–3 medium ripe bananas, sliced
  • 1 cup sour cream

Topping

  • 1 cup heavy whipping cream

Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the crushed graham crackers, sugar, and melted butter. Press this mixture firmly and evenly into the bottom of a springform pan. Bake the crust for 8-10 minutes until it turns golden brown, then remove from the oven and allow it to cool completely.
  2. Make the filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add in the sour cream and gently fold in the sliced bananas, ensuring the bananas are well distributed without mashing.
  3. Assemble the cheesecake: Pour the cream cheese and banana filling over the cooled crust, spreading it evenly with a spatula to create a smooth top layer.
  4. Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold half of the whipped cream into the cheesecake filling to lighten it, then spread the remaining whipped cream on top as a decorative topping.
  5. Chill and serve: Cover the cheesecake and refrigerate for at least four hours, or preferably overnight, to allow the flavors to meld and the cheesecake to firm up before serving.

Notes

  • Use ripe bananas for the best natural sweetness and flavor.
  • Ensure cream cheese is softened to prevent lumps in the filling.
  • Folding whipped cream gently preserves its airy texture.
  • For easier slicing, chill the cheesecake overnight.
  • You can garnish with additional banana slices or a drizzle of caramel sauce if desired.
