A delicious and creamy baked salmon recipe featuring Boursin Garlic & Fine Herbs cheese, enhanced with lemon zest and juice, garlic, and olive oil. Perfectly baked to flaky perfection and optionally served with roasted cherry tomatoes or asparagus for a complete, elegant meal.

Ingredients

Salmon and Cheese

  • 4 salmon fillets (6 oz each)
  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese

Seasoning and Garnish

  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Zest and juice of ½ lemon
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)
  • Cherry tomatoes or asparagus (optional, for roasting alongside)

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit (200 degrees Celsius) and lightly oil a baking dish or line it with parchment paper to ensure easy cleanup.
  2. Prepare the salmon: Pat the salmon fillets dry with paper towels and place them skin-side down in the prepared baking dish. Drizzle each fillet with olive oil, then sprinkle salt, black pepper, minced garlic, and lemon zest evenly over them.
  3. Add the Boursin cheese: Break the Boursin Garlic & Fine Herbs cheese into chunks and distribute them evenly on top of each salmon fillet to create a creamy topping.
  4. Bake the salmon: Place the baking dish in the oven and bake for 18 minutes, or until the salmon is opaque and flakes easily with a fork. For a lightly browned top, broil the salmon for the last 2 minutes, watching carefully to prevent burning.
  5. Garnish and serve: Remove the salmon from the oven, squeeze fresh lemon juice over the top, garnish with chopped fresh parsley if desired, and serve immediately. Optionally, serve alongside roasted cherry tomatoes or asparagus.

Notes

  • You can substitute the Boursin cheese with other soft herbed cheeses like cream cheese mixed with fresh herbs if unavailable.
  • If you prefer your salmon well-done, increase baking time by 2 to 3 minutes but avoid overcooking to retain moisture.
  • Adding cherry tomatoes or asparagus directly to the baking dish allows them to roast alongside the salmon, creating an easy one-pan meal.
  • Use fresh lemon zest and juice for a brighter citrus flavor versus bottled lemon juice.
  • Broil carefully at the end to ensure a nicely browned cheese topping without burning.
