Ingredients

Chicken Breasts:

  • 4 large organic chicken breasts, bone-in
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons On Everything All-Purpose Blend
  • 2 teaspoons smoked paprika
  • 1 teaspoon sea salt
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 1 medium apple, sliced
  • 1 cup organic chicken stock

Homemade Apple Honey Dijon Glaze:

  • 0.5 cup raw honey
  • 2 tablespoons dijon mustard
  • 1 medium apple, sliced
  • 0.25 cup organic chicken stock

Instructions

  1. Prep Chicken: Preheat oven to 400 degrees Fahrenheit and lightly grease a non-stick griddle pan or oven-safe cast iron skillet. In a large bowl, combine chicken breasts with olive oil and seasonings including salt, On Everything All-Purpose Blend, cumin, cinnamon, and smoked paprika. Mix until chicken is fully coated.
  2. Score Chicken: Place seasoned chicken on a cutting board and make 1-inch apart slits atop each breast to help marinade absorb better and for even cooking.
  3. Optional Marinate: For best flavor, seal coated chicken in a ziplock bag and refrigerate for at least 3 hours or overnight. Before cooking, let chicken sit at room temperature for 15-20 minutes.
  4. Bake Chicken and Apples: Arrange chicken breasts side by side on prepared pan, leaving space in between. Distribute sliced apples around and between chicken. Pour chicken stock around the pan. Bake for 35-40 minutes until chicken is golden brown and cooked through.
  5. Make Glaze: In a saucepan over medium-high heat, combine honey, dijon mustard, sliced apples, and chicken stock. Bring to boil then reduce heat to medium-low and cook 1-2 minutes until sauce thickens and smooths. Remove from heat.
  6. Glaze and Finish Baking: Spoon glaze generously over chicken and apples. Bake an additional 15 minutes until glaze caramelizes on chicken.
  7. Serve: Remove from oven, let cool slightly, spoon remaining glaze over chicken. Serve with preferred sides such as salad, pasta, rice, or mashed potatoes.

Notes

  • Use boneless chicken breasts if preferred; reduce baking time to 30-35 minutes to avoid drying out.
  • For homemade On Everything All-Purpose Blend, combine sesame seeds, poppy seeds, dried garlic, dried onion, and sea salt.
  • Apples with firm texture like Honeycrisp or Granny Smith work best to hold shape during baking.
  • Marinating chicken improves flavor and tenderness but can be skipped if short on time.
  • You can add root vegetables like potatoes or squash to the baking pan for a complete one-pan meal; adjust baking time accordingly for vegetable tenderness.
  • Let cooked chicken rest for a few minutes before serving to retain juiciness.
