Delight in these Apple Cinnamon Crepes featuring a gluten-free oat and rice flour batter, sweetened with banana and coconut sugar, filled with a warm spiced apple mixture. Perfectly thin and tender crepes cooked on the stovetop, served with a luscious apple cinnamon filling and optional caramel drizzle.

Ingredients

Dry ingredients:

  • 1 cup (90 g) oats ground into flour or oat flour
  • ½ cup (80 g) rice flour
  • 4 tbsp (32 g) cornstarch or arrowroot flour
  • 2 tbsp coconut sugar or brown sugar
  • 1 tbsp flax seeds ground or chia seeds
  • 1 tsp baking powder

Wet ingredients:

  • 1 ½ cups (360 ml) plant-based milk (canned lite coconut milk recommended)
  • 1 small (80 g) banana
  • ½ tbsp lemon juice or lime juice
  • ½ tsp vanilla extract
  • oil for frying

Apple Filling:

  • 3 apples, peeled, cored, and chopped
  • 3 tbsp coconut sugar or brown sugar
  • 2 tbsp plant-based milk
  • ½ tbsp lemon juice or lime juice
  • ½ tsp cornstarch
  • 1 tsp cinnamon

Instructions

  1. Combine dry ingredients: In a bowl, whisk together the oat flour, rice flour, cornstarch, coconut sugar, ground flax or chia seeds, and baking powder until evenly mixed.
  2. Blend wet ingredients: In a food processor or blender, combine the plant-based milk, banana, lemon or lime juice, and vanilla extract. Blend until smooth and creamy.
  3. Mix batter: Pour the blended wet ingredients into the bowl with the dry ingredients. Whisk thoroughly to create a smooth batter, then let it rest for a few minutes to thicken slightly.
  4. Prepare skillet and cook crepes: Heat a small amount of oil in a small to medium non-stick skillet over medium heat. Pour ¼ cup of batter into the skillet and spread it thinly with the back of a ladle. Cook for 2 to 4 minutes or until edges lift easily. Flip and cook for an additional 1 to 2 minutes until cooked through. Add a splash of milk to the batter if it becomes too thick. Repeat until all batter is used.
  5. Make apple filling: Add chopped apples, coconut sugar, plant-based milk, lemon juice, cornstarch, and cinnamon to a skillet or saucepan. Stir to combine before turning on heat. Bring to a boil then reduce to low/medium heat and simmer until the apples are tender and the filling thickens, about 5 to 7 minutes.
  6. Assemble crepes: Place a few teaspoons of warm apple filling onto each crepe, roll them up, and serve immediately. Optionally drizzle with caramel sauce for extra sweetness and flavor.

Notes

  • Use oat flour made from finely ground oats or purchase oat flour to keep it gluten-free.
  • Adjust milk quantity if batter thickens too much during cooking to maintain a pourable consistency.
  • Banana adds natural sweetness and moisture, but you can substitute with applesauce if preferred.
